There is no break it off or slow it down. If you want to break up, you break up. If you really like her but it is a bit much too soon, you slow it down. And the best way to do that is to say "I'm going to be busy doing xyz the next few weeks (and you do have to be busy doing those things) but I'll be free Thursday this week, we should get together then." You take charge by being less available, but you still make time to see her. You plan it in advance so she knows she is important. Easy.
